Chef’s Recipe of the Week – Bruschetta Pomodora

This week’s recipe is a well-liked starter from our restaurant here in Wakefield, Bruschetta Pomodora (Bruschetta with Tomatoes).

For this quick and easy recipe you will need…

  • 250g of cherry tomatoes
  • 1 garlic clove
  • Extra virgin olive oil
  • Roughly 6 basil leaves
  • Bruschetta bread

Method

  1. Chop our tomatoes, season, add your basil and drizzle olive oil.
  2. Heat a grill pan and toast your bread on both sides.
  3. Rub one side of your bread with your garlic clove.
  4. Spoon your tomato mixture on top and sprinkle with torn basil leaves, drizzle with olive oil and serve.
