This week’s recipe is a well-liked starter from our restaurant here in Wakefield, Bruschetta Pomodora (Bruschetta with Tomatoes).
For this quick and easy recipe you will need…
- 250g of cherry tomatoes
- 1 garlic clove
- Extra virgin olive oil
- Roughly 6 basil leaves
- Bruschetta bread
- Chop our tomatoes, season, add your basil and drizzle olive oil.
- Heat a grill pan and toast your bread on both sides.
- Rub one side of your bread with your garlic clove.
- Spoon your tomato mixture on top and sprinkle with torn basil leaves, drizzle with olive oil and serve.
